  • 4 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 large lemon, juiced
  • 1/4 cup (60ml) dry white wine (e.g., Sauvignon Blanc)
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste
  • Toothpicks (optional, for securing meat)

Instructions

  1. Thaw frozen lobster tails in the fridge overnight if necessary.
  2. Butterfly the lobster tails: Use kitchen shears to cut down the center of the top shell, pry it open, and lift the meat out, resting it on top of the tail fan. Secure with a toothpick if needed. Season lightly with salt and pepper.
  3. In a small saucepan, melt butter over low heat. Add minced garlic, olive oil, white wine, red pepper flakes, and lemon juice. Simmer gently for 2-3 minutes until fragrant. Remove from heat and stir in half of the parsley.
  4. Heat a large skillet over medium-high heat with a tablespoon of olive oil.
  5. Place lobster tails meat-side down in the skillet. Sear for 2 minutes until opaque and golden.
  6. Flip tails and cook shell-side for another 2 minutes.
  7. Reduce heat to medium. Pour the garlic butter sauce over the tails. Baste generously with the sauce.
  8. Cover the skillet and cook for 3-4 minutes, basting every minute, until the internal temperature reaches 145°F (63°C).
  9. Remove toothpicks, transfer to a platter, drizzle with remaining sauce, and garnish with remaining parsley and lemon wedges. Serve immediately.

Notes

Do not overcook the lobster; it should be opaque and firm. If the sauce is too thin, let it simmer longer to reduce. Fresh garlic is essential for the best flavor. For a dairy-free version, substitute butter with olive oil or a dairy-free alternative.
