- 3 large ripe bananas (about 1.5 cups mashed)
- 15.25 oz box yellow cake mix
- 1/3 cup milk
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Optional: 1/2 cup walnuts or pecans
- Optional: 1/2 cup chocolate chips
- Optional: 1 teaspoon cinnamon
Instructions
- Preheat oven to 350°F (175°C). Line a 9×5 loaf pan with parchment paper or grease well.
- Peel ripe bananas and mash them in a large mixing bowl until mostly smooth.
- Add milk, vegetable oil, and vanilla extract to the mashed bananas. Stir to combine.
- Pour in the yellow cake mix. Add optional nuts, chocolate chips, or cinnamon if desired.
- Stir with a wooden spoon or spatula until just incorporated. Do not overmix.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use bananas that are completely black on the outside for best flavor and sweetness. Do not overmix the batter to avoid a dense texture. Store leftovers in an airtight container at room temperature for up to 3 days, or freeze slices for up to 3 months.
