- ½ cup brown sugar

- ½ cup (45g) unsweetened cocoa powder
- ½ teaspoon salt
- 10 oz (283g) jumbo marshmallows

Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving a 2-inch overhang on the long sides, and grease lightly.
- In a microwave-safe bowl, combine butter and chocolate chips. Microwave in 30-second intervals, stirring until smooth and glossy. Set aside to cool slightly.
- Whisk white sugar, brown sugar, eggs, and vanilla extract into the melted chocolate mixture vigorously for 1-2 minutes until shiny and thickened.
- Stir in cocoa powder and salt. Add flour and fold gently with a spatula until just combined. Do not overmix. Fold in reserved chocolate chips if using.
- Pour batter into prepared pan and spread evenly. Bake for 25-30 minutes until a toothpick inserted in the center comes out with moist crumbs.
- Remove from oven and immediately pile jumbo marshmallows over the hot brownies, spreading to cover the surface. Let sit for 2-3 minutes to soften.
- Move oven rack to top position and turn on broiler. Broil marshmallows for 2-4 minutes, watching closely, until puffed and golden brown in spots.
- Let brownies cool in the pan for at least 30 minutes before slicing. Drizzle with chocolate or sprinkle with sea salt if desired.
Notes
Use fresh marshmallows for best puffing results. Do not overmix the batter to maintain fudgy texture. Watch the broiler closely as it can burn marshmallows quickly. Cool completely before cutting to prevent mess. Can be frozen for up to 3 months without marshmallows.
