  • 46 tablespoons heavy cream
  • 45 medium ripe peaches, peeled and sliced
  • 1 tablespoon lemon juice
  • ¼ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • Coarse sugar for sprinkling
  • Heavy cream for brushing

Instructions

  1. Pulse flour, salt, and sugar in a food processor. Add cold cubed butter and pulse 15-20 times until mixture resembles coarse meal with pea-sized butter bits.
  2. With processor running, slowly drizzle in heavy cream, one tablespoon at a time, until dough just begins to come together. Form into a rough ball.
  3. Divide dough into disks, wrap in plastic, and chill in the fridge for at least 30 minutes.
  4. While dough chills, toss sliced peaches with lemon juice, sugar, cornstarch, and vanilla. Let sit for 10 minutes.
  5. Preheat oven to 400°F (200°C). Roll out dough into a 12-inch circle on a floured surface and transfer to a parchment-lined baking sheet.
  6. Arrange peaches in the center, leaving a 2-inch border. Fold edges of dough over fruit, pleating as you go.
  7. Brush folded edges with heavy cream and sprinkle generously with coarse sugar.
  8. Bake for 35-40 minutes until crust is golden brown and juices are bubbling.
  9. Cool on the pan for at least 20 minutes before slicing to allow filling to set.

Notes

Keep all ingredients cold to ensure a flaky crust. Do not skip the chilling step. If using frozen peaches, thaw completely and drain excess liquid. Let the galette cool completely before slicing to prevent the filling from running.
