Description
A quick and easy breakfast hack using a waffle iron to create perfectly crispy, golden hash browns with minimal effort and cleanup. These savory wedges are packed with cheddar cheese and fresh chives.
Ingredients
Scale
- 2 large yellow potatoes (about 600g, such as Yukon Gold)
- 1 large egg
- ½ cup (50g) sharp cheddar cheese, shredded
- 2 tablespoons fresh chives, chopped
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ¾ teaspoon kosher salt (or to taste)
- Freshly cracked black pepper (to taste)
- Cooking spray (avocado oil or olive oil spray recommended)
Instructions
- Wash the potatoes thoroughly (no need to peel). Shred them using a box grater or food processor.
- Place the shredded potatoes in a clean kitchen towel or layers of paper towels. Squeeze tightly to remove as much moisture as possible. This step is crucial for crispiness.
- Transfer the dried potatoes to a mixing bowl. Add the egg, shredded cheddar cheese, chopped chives, garlic powder, smoked paprika, salt, and pepper. Stir until well combined.
- Preheat your waffle iron to medium-high heat.
- Generously spray both the top and bottom plates of the waffle iron with cooking spray.
- Scoop about ½ cup of the potato mixture into the center of the bottom plate. Close the lid gently without pressing down hard.
- Cook for 5-6 minutes. For extra crispiness, flip the hash browns halfway through cooking.
- Check for golden brown color and crispiness. If needed, cook for another 2-3 minutes.
- Remove hash browns with a spatula and serve immediately while hot.
Notes
Ensure potatoes are very dry before mixing to achieve maximum crispiness. Do not overcrowd the waffle iron; use ½ cup per batch. If making ahead, keep cooked hash browns warm in a 200°F oven on a wire rack to maintain crispness. Clean the waffle iron while it is still warm.
