Creamy No-Bake Peanut Butter Cup Pie

  • Author: Olivia
  • Total Time: 1 hour 20 minutes
  • Yield: 8 servings 1x

Description

An easy, four-ingredient no-bake dessert featuring a crunchy Oreo crust, a rich peanut butter and cream cheese filling, and a smooth chocolate topping. Perfect for impressing guests with minimal effort.

Ingredients

Scale
  • 24 Oreo cookies (about 1.5 cups crumbs)
  • 1 cup (250g) creamy peanut butter
  • 8 ounces (225g) cream cheese, softened
  • 1 cup (170g) semi-sweet chocolate chips
  • ½ cup (120ml) heavy cream
  • 1 tablespoon melted butter (optional, for crust)
  • Pinch of salt

Instructions

  1. Crush the Oreos into fine crumbs using a food processor. Mix with melted butter if using, then press firmly into the bottom and slightly up the sides of an 8-inch springform pan. Chill in the fridge.
  2. In a large mixing bowl, beat the softened cream cheese until completely smooth using an electric mixer.
  3. Add the peanut butter and pinch of salt to the cream cheese. Beat on low speed just until combined.
  4. Pulse a few more Oreos to make coarse crumbs (about ½ cup) and fold them into the peanut butter mixture by hand.
  5. Pour the filling into the chilled crust, spread evenly, and refrigerate for at least 30 minutes to firm up.
  6. In a microwave-safe bowl, combine chocolate chips and heavy cream. Microwave in 30-second intervals, stirring between, until smooth and glossy.
  7. Pour the chocolate topping over the chilled pie and spread evenly to the edges.
  8. Refrigerate for at least 1 hour or overnight until the topping is set.
  9. Run a warm knife around the edge of the pan, release the latch, and slice to serve.

Notes

Ensure cream cheese is fully softened to room temperature to avoid lumps. The pie tastes better the next day as flavors meld. Store covered in the fridge for up to 5 days. Do not freeze as the texture may become grainy. Use a warm knife for clean slices.
