  • 4 large flour tortillas (8-inch / 20cm)
  • 2 cups cooked chicken breast, shredded
  • 4 oz cream cheese, softened
  • 1/4 cup ranch or Caesar dressing
  • 2 cups romaine lettuce, finely chopped
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup croutons, crushed
  • Black pepper, to taste
  • Optional: Bacon bits

Instructions

  1. Shred the cooked chicken and finely chop the romaine lettuce. Drain any excess liquid from the lettuce to prevent soggy pinwheels.
  2. In a medium bowl, combine the shredded chicken, chopped lettuce, crushed croutons, and shredded Parmesan. Add the ranch or Caesar dressing and mix until evenly coated. Adjust seasoning with salt and pepper if needed.
  3. Lay out the tortillas on a clean surface. Spread the softened cream cheese evenly over each tortilla, leaving a 1/2-inch border around the edges.
  4. Spoon the chicken mixture onto the tortilla, starting about 2 inches from the bottom edge. Spread evenly, leaving a border on the sides.
  5. Use plastic wrap to help roll the tortilla tightly away from you. Twist the ends of the plastic wrap like a candy wrapper to help the pinwheel hold its shape.
  6. Place the rolled pinwheels in the fridge for at least 10 minutes to firm up.
  7. Using a sharp knife, slice each tortilla into 4-6 pinwheels. Wipe the knife between cuts for clean slices.
  8. Serve immediately or pack in an airtight container for lunch.

Notes

Ensure cream cheese is fully softened to avoid tearing the tortillas. Do not overfill the tortillas to prevent bursting. Chilling is essential for clean slicing. These do not freeze well due to the lettuce and cream cheese.
