Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, beat softened butter, brown sugar, and white sugar together until light and fluffy (about 3-4 minutes).
- Beat in eggs one at a time, then mix in vanilla extract. Scrape down the sides of the bowl.
- In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
- Add dry ingredients to the wet mixture and mix on low speed just until combined (do not overmix).
- Fold in rolled oats and raisins until evenly distributed.
- Chill dough for 30 minutes to 1 hour for thicker cookies (optional but recommended).
- Scoop dough into 2-tablespoon balls and place on baking sheets, spacing 2 inches apart.
- Bake for 12-14 minutes until edges are lightly golden but centers look soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
