Chewy Brown Sugar Oatmeal Raisin Cookies: Best Soft Recipe

  • Author: Olivia
  • Total Time: 35 minutes
  • Yield: 24 cookies 1x

Description

These thick, chewy oatmeal raisin cookies feature a soft center and slightly crisp edges, made with molasses-rich brown sugar and simple pantry staples for a bakery-quality treat.

Ingredients

Scale
  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) dark brown sugar, packed
  • 1/2 cup (100g) granulated white sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 cups (160g) old-fashioned rolled oats
  • 1 cup (150g) raisins
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, beat softened butter, brown sugar, and white sugar together until light and fluffy (about 3-4 minutes).
  3. Beat in eggs one at a time, then mix in vanilla extract. Scrape down the sides of the bowl.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  5. Add dry ingredients to the wet mixture and mix on low speed just until combined (do not overmix).
  6. Fold in rolled oats and raisins until evenly distributed.
  7. Chill dough for 30 minutes to 1 hour for thicker cookies (optional but recommended).
  8. Scoop dough into 2-tablespoon balls and place on baking sheets, spacing 2 inches apart.
  9. Bake for 12-14 minutes until edges are lightly golden but centers look soft.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use room temperature butter and measure flour by spooning it into the cup rather than scooping. Do not overbake; cookies continue to cook on the hot pan. Store in an airtight container with a slice of bread to maintain chewiness.
