Description
A convenient, kid-approved vegan breakfast made with rolled oats, pumpkin puree, and warming spices. This meal prep recipe requires no cooking and is ready to eat straight from the jar after an overnight soak.

- 1 cup (90g) old fashioned rolled oats
- 1/4 cup (60g) 100% pure pumpkin puree
- 3/4 cup (180ml) unsweetened plant-based milk (almond or oat milk)
- 1 tablespoon (20ml) pure maple syrup
- 1/2 teaspoon pumpkin pie spice
- 1 teaspoon (5g) chia seeds
- 1/2 teaspoon (2.5ml) vanilla extract
Instructions
- Wash mason jars or meal prep containers and let them dry completely.
- Add 1 cup of rolled oats and 1 teaspoon of chia seeds to each jar.
- Add 1/4 cup of pumpkin puree, 1 tablespoon of maple syrup, and 1/2 teaspoon of vanilla extract to each jar.
- Pour 3/4 cup of plant-based milk into each jar.
- Put the lid on tight and shake vigorously for about 30 seconds until the mixture is uniform and orange. Alternatively, stir thoroughly with a spoon.
- Place the jars in the refrigerator for at least 8 hours, ideally overnight.
- Serve straight from the jar, optionally topped with walnuts, cinnamon, or fresh berries.
Notes
Do not use quick oats or steel-cut oats as they do not achieve the right texture. Shake the jar vigorously to ensure the pumpkin puree is fully incorporated. Store in the fridge for up to 5 days. Do not freeze as the texture will become slimy. Adjust milk ratio if you prefer a looser consistency.
