These ultra-fluffy Japanese soufflé pancakes are a gentle, sweet, and incredibly satisfying breakfast treat. With a jiggly texture and kid-safe steps, they turn a mundane morning into a fun, memorable event.

- 1 cup (120g) self-rising flour
- 3 large eggs, separated
- 3 tbsp (40g) granulated sugar, divided
- 1/4 cup (60ml) milk
- 1 tsp vanilla extract
- 1/4 tsp cream of tartar
- Cooking oil or butter for the pan
Instructions
- Separate the eggs, placing yolks in one bowl and whites in another, ensuring no yolk contaminates the whites.
- To the egg yolks, add milk, vanilla extract, and 1 tablespoon of sugar. Whisk until smooth.
- Add the self-rising flour to the yolk mixture and gently whisk until just combined. Set aside.
- Add cream of tartar to the egg whites. Beat with a hand mixer on medium-high speed until soft peaks form.
- Gradually add the remaining 2 tablespoons of sugar while continuing to beat until stiff, glossy peaks form.
- Add about one-third of the whipped egg whites to the yolk batter and stir gently to lighten.
- Pour the yolk mixture back into the remaining egg whites. Gently fold together using a cutting motion until barely combined and marbled.
- Heat a small non-stick skillet over low heat and add a tiny amount of oil.
- Drop about 1/4 cup of batter into the pan. Cover with a lid and cook for 4-5 minutes until bubbles form and edges look set.
- Carefully flip the pancake. Cook the other side for another 3-4 minutes, covered, until springy to the touch.
- Repeat with remaining batter to make 6-8 small pancakes.
Notes
Keep heat low to prevent burning before the inside cooks. Do not skip the lid, as steam is needed for the pancakes to rise. Fold gently to preserve air bubbles. These are best eaten immediately and do not freeze well.
