- ½ cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- ¾ cup heavy cream
- Extra granulated sugar for sprinkling
- Optional: ¼ teaspoon nutmeg
- Optional: Zest of one lemon
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- In a large mixing bowl, combine washed and hulled berries with sugar, cornstarch, lemon juice, and vanilla. Toss gently to coat evenly.
- Pour the berry mixture into the prepared baking dish and spread it out.
- In a medium bowl, whisk together flour, baking powder, and salt.
- Add the cold, cubed butter to the flour mixture and cut it in using a fork or pastry cutter until the mixture resembles coarse crumbs with pea-sized butter pieces.
- Pour in the heavy cream and gently stir until the dough just comes together. Do not overmix.
- Drop spoonfuls of the biscuit dough evenly over the berry mixture, leaving some gaps.
- Sprinkle the tops of the biscuits with extra granulated sugar.
- Bake for 45-50 minutes until the topping is golden brown and the berry filling is bubbling vigorously around the edges.
- Let the cobbler cool for 15-20 minutes before serving to allow the filling to thicken.
Notes
Keep the butter cold to ensure flaky biscuits. Do not overmix the dough to avoid tough biscuits. If using frozen berries, do not thaw them first. The cobbler can be made ahead by prepping the filling up to 24 hours in advance.
