Description
A festive, make-ahead sangria that uses bloomed spices to create deep flavor, masking mediocre wine with crisp apple cider and warm autumn spices. Served cold, it bridges the gap between a heavy cocktail and a refreshing punch.
Ingredients
- 750 ml dry white wine (Sauvignon Blanc or Pinot Grigio)
- 1 liter (4 cups) 100% apple cider
- 2 medium apples (Honeycrisp or Pink Lady), cored and sliced into 1/4 inch half-moons
- 1 large orange, sliced into rounds
- 1 large cinnamon stick
- 2 whole star anise pods
- 1 inch piece fresh ginger, sliced thinly
- 2 whole cloves
- 2–4 oz brandy or dark rum
Instructions
- Prep the fruit: Wash apples and orange. Core apples and slice into thin half-moons. Slice orange into rounds.
- Bloom the spices: Pour apple cider into a small saucepan. Add cinnamon stick, star anise, ginger, and cloves. Warm over medium-low heat until just steaming (do not boil). Let steep for 5 minutes off heat. Remove spices with a slotted spoon and let cider cool to room temperature.
- Combine the base: In a large pitcher, combine cooled spiced cider, white wine, and brandy or rum. Stir gently.
- Add fruit and chill: Add sliced apples and oranges to the liquid. Stir gently, cover, and refrigerate for at least 4 hours or ideally overnight.
- Serve: Stir sangria well before serving. Pour into glasses filled with ice. Garnish with fresh apple slice or rosemary.
Notes
Do not use apple juice; use 100% apple cider for proper texture and acidity. Blooming the spices in warm cider releases essential oils for better flavor. If the sangria is too sweet, add a splash of club soda or lemon juice. The fruit will get soft after 2 days, so strain if storing longer than 24 hours. Do not freeze the fruit, but the liquid base can be frozen.
