- 1 tablespoon fresh lemon or lime juice

- 4–6 thick slices sourdough bread

- 4 large fresh eggs
- 1 tablespoon white vinegar
- Red pepper flakes (optional garnish)

- Everything bagel seasoning (optional garnish)
Instructions
- Cut avocados in half, remove pits, and scoop flesh into a bowl.
- Add lemon/lime juice, sea salt, and black pepper to the avocado.
- Mash the avocado with a fork to your desired consistency (chunky or smooth) and set aside.
- Preheat toaster oven to 400°F (200°C) or prepare a regular toaster.
- Toast the sourdough slices until golden brown and crisp, then set aside on a plate.
- Fill a small saucepan with about 2 inches of water and bring to a gentle simmer.
- Add vinegar to the water.
- Crack an egg into a small ramekin.
- Create a gentle swirl in the water with a spoon.
- Carefully slide the egg from the ramekin into the center of the swirl.
- Repeat with remaining eggs, ensuring not to overcrowd the pan.
- Poach eggs for 3-4 minutes for a runny yolk or 4-5 minutes for a firmer yolk.
- Remove eggs with a slotted spoon and place on a paper towel-lined plate to drain.
- Spread a generous layer of mashed avocado onto each slice of toasted sourdough.
- Top each toast with a poached egg.
- Season with additional salt, pepper, and optional garnishes like red pepper flakes or herbs.
- Serve immediately while the bread is warm and the egg yolk is runny.
Notes
Use fresh eggs for better poaching results. Keep water at a gentle simmer, not a rolling boil, to prevent eggs from breaking apart. Toast bread well to prevent sogginess. This dish is best served immediately; do not freeze.
