Description

Soft, chewy snickerdoodle bars made with just five ingredients in one bowl. These easy holiday dessert bars feature a classic cinnamon-sugar topping and require no rolling of dough.


Ingredients

  • 1 cup (226g) unsalted butter, softened to room temperature
  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (100g) granulated sugar (for topping)
  • 2 teaspoons ground cinnamon (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides, and spray with non-stick spray.
  2. In a mixing bowl, combine softened butter and 1 cup granulated sugar. Beat on medium speed until light and fluffy, about 2-3 minutes.
  3. Add the egg and mix until just combined. Scrape down the sides of the bowl.
  4. In a separate small bowl, whisk together flour, cream of tartar, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture. Mix on low speed until just combined. Do not overmix.
  6. Transfer batter to prepared pan and spread evenly into corners.
  7. In a small bowl, mix 1/2 cup sugar and 2 teaspoons cinnamon. Sprinkle evenly over batter and gently press into the top.
  8. Bake for 20-25 minutes until edges are golden brown and center is just set.
  9. Cool in pan for at least 15 minutes, then lift out using parchment overhang. Cool completely on a wire rack before cutting into 16 squares.

Notes

Butter must be softened but not melted. Use the spoon-and-level method for flour to avoid dense bars. Do not overmix the batter. Press the cinnamon sugar topping into the batter to prevent it from falling off. Bars stay soft for up to 4 days in an airtight container.
