Description

Ingredients

  • 1 cup (200g) granulated sugar
  • 1 cup (220g) packed brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • ¾ cup (75g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (120g) powdered sugar, for rolling
  • ½ cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes.
  3. Add eggs one at a time, beating well after each addition, then mix in vanilla extract until combined.
  4. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  5. Add dry ingredients to the wet mixture in two batches, mixing on low speed until just combined. Do not overmix.
  6. Cover the dough and refrigerate for at least 30 minutes to firm up.
  7. Place powdered sugar in a shallow bowl. Scoop dough into 1.5-tablespoon portions and roll into balls.
  8. Roll each dough ball in powdered sugar until completely coated.
  9. Place coated balls on prepared baking sheets, leaving 2 inches between them.
  10. Bake for 10-12 minutes until tops are cracked and edges just barely start to set. Centers should still look soft.
  11. Let cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Do not overbake; cookies continue to cook on the hot pan. For extra-crystallized cracks, double-roll the dough balls in powdered sugar. Store with a slice of bread to keep them soft. Dough can be frozen for later use.
