Instructions
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a large bowl, beat softened butter and 1 cup granulated sugar on medium-high speed for 3-4 minutes until pale, fluffy, and creamy.
- Add eggs one at a time, beating well after each addition. Scrape down sides of bowl. Add vanilla extract and mix until combined.
- In a separate medium bowl, whisk together flour, baking soda, cream of tartar, and salt.
- Turn mixer to low speed and gradually add dry ingredients to wet ingredients. Mix just until flour disappears; do not overmix.
- Optional: Chill dough in fridge for 30 minutes to 1 hour for thicker cookies.
- In a shallow bowl, mix ½ cup granulated sugar with cinnamon.
- Scoop dough balls (approx. 1.5 tablespoons each) and roll them in the cinnamon sugar mixture until fully coated.
- Place dough balls on baking sheets 2 inches apart.
- Bake for 8-10 minutes until edges are just starting to turn golden but centers still look soft.
- Let cookies sit on baking sheet for 5 minutes to set, then transfer to a cooling rack to cool completely.
Notes
Do not overbake; cookies should look soft when removed from the oven as they firm up while cooling. Use the ‘spoon and level’ method for flour to avoid dry cookies. Store in an airtight container with a slice of bread to maintain softness for up to 5 days. Dough can be frozen for later baking.
