- 1/2 cup (120g) 100% pure pumpkin puree (pressed to remove excess moisture)
- 2 tablespoons (30ml) heavy cream (or full-fat coconut milk for dairy-free)
- 1 teaspoon (2g) pumpkin pie spice
- 1/4 teaspoon (0.5g) smoked paprika
- 1/4 teaspoon (1.5g) flaky sea salt
- 1 cup (100g) wood chips (hickory, apple, or cherry, soaked for 30 minutes)
Instructions
- Light your charcoal or gas grill to create an indirect heat zone with a temperature around 350°F (175°C).
- Soak wood chips for at least 30 minutes, then drain and place them over the heat source to generate a steady stream of white smoke.
- In a 10-inch cast iron skillet, whisk together maple syrup, pumpkin puree, heavy cream, pumpkin pie spice, smoked paprika, and salt until smooth.
- Place the skillet on the indirect heat zone of the grill (away from direct flames).
- Close the grill lid and let the syrup simmer gently for 10 minutes, stirring every 2-3 minutes with a silicone spatula.
- Monitor the syrup until it thickens slightly and coats the back of a spoon; do not let it boil or burn.
- Remove the skillet from the grill and pour the hot syrup into a clean glass jar.
- Allow the syrup to cool completely; it will thicken further as it reaches room temperature.
Notes
Ensure pumpkin puree is thick and not watery; press through cheesecloth if necessary. Use indirect heat to prevent burning. The syrup will thin when hot and thicken upon cooling. Store in the refrigerator for up to 2 weeks or freeze in ice cube trays for up to 3 months.
