Description

A flavorful recipe for premium pork bratwursts that are simmered in a beer bath, smoked low and slow for a deep smoke ring, and finished with a sear. Served with sweet, jammy caramelized onions and Dijon mustard.

  • 12 oz Light Lager Beer (Pilsner or Helles)
  • 3 large Yellow Onions (approx. 2 lbs / 900 g)
  • 4 tbsp Unsalted Butter
  • 2 tbsp Brown Sugar
  • 2 tbsp Dijon Mustard (plus more for serving)
  • 1 tsp Caraway Seeds (optional)
  • 1 lb Hickory or Applewood Smoking Pellets
  • Brioche buns or soft pretzel rolls for serving

Instructions

  1. Prepare the beer bath: In a heavy-bottomed pot, combine the beer, 1 chopped onion, 1 tablespoon of Dijon mustard, and caraway seeds. Bring to a gentle simmer over medium heat.
  2. Simmer the brats: Gently place the bratwursts into the simmering beer bath. Lower heat to medium-low and simmer for 15 minutes until internal temperature reaches 155°F (68°C). Remove brats and pat dry.
  3. Preheat the smoker: Set your pellet smoker to 225°F (107°C) and add hickory or applewood pellets. Preheat for 15-20 minutes until producing clean, blue smoke.
  4. Smoke the brats: Place brats directly on smoker grates. Smoke for 45-60 minutes until internal temperature reaches 160°F (71°C).
  5. Caramelize the onions: While brats smoke, melt butter in a cast iron skillet over medium-low heat. Add remaining 2 chopped onions and brown sugar. Cook slowly for 30-40 minutes, stirring occasionally, until deep golden brown and jammy.
  6. Sear the brats: Crank smoker to high (400°F+) or move brats to a hot grill grate. Sear for 1-2 minutes per side to create a brown crust. Do not pierce with a fork.
  7. Rest and serve: Let brats rest for 5 minutes. Slice lengthwise or into rounds. Pile caramelized onions on top and serve with Dijon mustard on toasted buns.

Notes

Do not skip the simmering step as it ensures juicy brats. Keep smoker temperature at 225°F for best smoke flavor. Patience is key for caramelizing onions; low heat prevents burning. Rest brats for 5 minutes after searing to redistribute juices.
