  • 1/4 cup (60ml) low-sodium soy sauce

  • 1 tablespoon (15ml) rice vinegar
  • 1 teaspoon fresh grated ginger
  • 1 tablespoon (8g) cornstarch
  • 1 tablespoon cold water

Instructions

  1. Pat chicken thighs dry with paper towels and place them in the bottom of a 1.5-quart slow cooker in a single layer.
  2. In a small mixing bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, and grated ginger until mostly dissolved.
  3. Pour the sauce mixture over the chicken thighs, coating them evenly, and turn to submerge as much as possible.
  4. Cover and cook on Low for 4 hours (or High for 2-3 hours) until chicken is fork-tender and reaches 165°F.
  5. Remove chicken to a plate and cover with foil.
  6. In a small cup, mix cornstarch and cold water to create a smooth slurry.
  7. Whisk the slurry into the hot sauce in the slow cooker and stir constantly for 2-3 minutes until thickened.
  8. Return chicken to the pot, turning to coat in the thickened sauce.
  9. Let sit in the sauce for 5 minutes to absorb flavors before serving.

Notes

Do not use chicken breasts as they dry out in the slow cooker. Ensure cornstarch is mixed with cold water before adding to hot sauce to prevent clumping. Let the chicken rest in the sauce for 5 minutes after thickening to help the sauce cling. This recipe does not freeze well; store leftovers in the fridge for up to 3 days.
