  • 1.5 lbs (680g) Ribeye or Sirloin Steak, cut into 1-inch cubes
  • 2 tablespoons Avocado Oil or Ghee
  • Kosher Salt and Black Pepper, to taste
  • 3 tablespoons Unsalted Butter
  • 56 cloves Garlic, minced
  • 2 sprigs Fresh Thyme or Rosemary
  • 1 lb (450g) Cremini or Button Mushrooms
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Parsley
  • Optional: Parmesan Rind (if not strict paleo)

Instructions

  1. Take steak out of the fridge and let it come to room temperature for 15-20 minutes. Pat cubes completely dry with paper towels and season generously with salt and pepper.
  2. Preheat oven to 400°F (200°C). Toss mushrooms with olive oil, dried oregano, parsley, salt, and pepper. Spread in a single layer on a baking sheet and roast for 15 minutes until shriveled and browned. Set aside.
  3. Heat a large cast iron or heavy stainless steel skillet over medium-high heat with avocado oil or ghee until shimmering. Add steak cubes in a single layer (do not overcrowd).
  4. Sear steak undisturbed for 2 minutes to form a crust, then toss and cook for another 2-3 minutes until browned on all sides and cooked to desired doneness (approx. 5-6 minutes total for medium-rare). Remove steak and set aside.
  5. Reduce heat to medium-low. Add butter to the pan. Once melted, add minced garlic and fresh herbs. Stir constantly for 1 minute until fragrant but not browned.
  6. Pour the garlic butter sauce over the steak bites and toss to coat. Plate the roasted mushrooms and top with the steak bites and sauce. Garnish with fresh parsley if desired and serve immediately.

Notes

Do not skip drying the steak; moisture prevents a good sear. Ensure the pan is very hot before adding meat. Let the steak rest for 5 minutes after cooking to redistribute juices. Do not wash mushrooms; wipe them with a damp cloth to avoid sogginess. Garlic burns easily, so keep heat low when adding it to the butter.
