  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • ½ cup heavy cream
  • 4 oz cream cheese, softened
  • ½ cup sour cream
  • 8 oz fresh egg noodles
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prep ingredients: Chop onion, slice mushrooms, mince garlic, and slice beef into thin strips. Measure sauces and spices.
  2. Sear the beef: Heat 1 tablespoon butter in a large Dutch oven or skillet over medium-high heat. Sear beef strips in batches (do not crowd the pan) for 2-3 minutes until browned. Remove beef to a bowl.
  3. Sauté veggies: Reduce heat to medium. Add remaining 1 tablespoon butter. Cook onions for 3-4 minutes until softened. Add mushrooms and cook for 5 minutes until browned. Add garlic and thyme in the last minute.
  4. Build the sauce: Return beef to the pot. Add beef broth, Worcestershire sauce, and Dijon mustard. Stir to scrape up browned bits. Simmer for 5 minutes.
  5. Add the cream: Reduce heat to low. Whisk in heavy cream and softened cream cheese until smooth and melted (2-3 minutes).
  6. Cook noodles: While sauce simmers, boil egg noodles in salted water until al dente. Drain and reserve ½ cup pasta water.
  7. Combine and finish: Remove pot from heat. Stir in sour cream. Taste and adjust salt/pepper. If sauce is too thick, add reserved pasta water. Fold in cooked noodles and toss to coat. Garnish with parsley and serve.

Notes

Do not crowd the beef when searing to ensure proper browning. Use room temperature cream cheese to prevent lumps. Always add sour cream off the heat to prevent curdling. Reserve pasta water to adjust sauce consistency. This recipe does not freeze well due to the dairy content.
