  • 4 salmon fillets (about 6 oz each)
  • 4 tablespoons unsalted butter (divided)
  • 45 cloves garlic, minced
  • 1/2 cup chicken broth (low-sodium)
  • 1/2 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 cups fresh baby spinach
  • 1/2 cup parmesan cheese, grated
  • 1 teaspoon dried oregano
  • 1 teaspoon Italian seasoning (divided)
  • Salt and black pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat salmon fillets dry and season both sides with salt, pepper, and half of the Italian seasoning.
  2. Heat a large skillet over medium-high heat. Add 1 tablespoon of butter and melt until foaming.
  3. Place salmon in the pan, skin-side down. Sear for 3-4 minutes until golden, then flip and cook for another 2-3 minutes. Remove salmon from pan and set aside.
  4. Reduce heat to medium. Add another tablespoon of butter to the same pan. Add minced garlic and cook for 30 seconds.
  5. Add sun-dried tomatoes, oregano, and remaining Italian seasoning. Stir for 30 seconds.
  6. Pour in chicken broth and heavy cream. Scrape up browned bits from the bottom of the pan. Simmer for 2-3 minutes until slightly thickened.
  7. Add fresh spinach and cook for 1-2 minutes until wilted.
  8. Stir in grated parmesan cheese until melted and smooth. Adjust seasoning if needed.
  9. Return salmon to the pan, nestling it into the sauce. Spoon sauce over the fish.
  10. Reduce heat to low, cover, and simmer for 5-7 minutes until salmon flakes easily with a fork and reaches 145°F.
  11. Drizzle with remaining tablespoon of butter and serve immediately.

Notes

Pat salmon dry before searing to ensure a good crust. Use fresh garlic for best flavor. Grate your own parmesan to avoid anti-caking agents. Do not overcook the salmon as it will continue to cook in the residual heat. The sauce may thicken in the fridge; reheat gently with a splash of milk or cream.
