Description

Rich, chewy chocolate cookies stuffed with a frozen center of Nutella that melts into a gooey, molten river when baked. These cookies are crispy on the outside, soft in the middle, and ready in just 15 minutes of active prep time.

  • 1 cup (200g) granulated sugar
  • 1 cup (220g) packed light brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 ½ cups (315g) all-purpose flour
  • ½ cup (50g) unsweetened cocoa powder (Dutch-processed recommended)
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 cup (170g) semi-sweet chocolate chips
  • 1 cup (250g) Nutella, frozen into 1-tablespoon portions

Instructions

  1. Spoon Nutella into an ice cube tray or mini muffin tin (about 1 tablespoon per portion). Freeze for at least 15-30 minutes until solid.
  2. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes with an electric mixer).
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract until combined.
  5. In a separate medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  6. Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined. Do not overmix. Fold in chocolate chips.
  7. Take a tablespoon of dough, flatten in palm, place one frozen Nutella ball in center, and wrap dough around it, sealing completely. Roll into a smooth ball.
  8. Place cookie balls on prepared baking sheets, about 2 inches apart.
  9. Bake for 10-12 minutes until edges are set but centers are still soft.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Ensure Nutella is frozen solid to prevent leaking. Do not overmix the dough to maintain a chewy texture. If the dough is too warm, chill assembled cookies for 15-20 minutes before baking. Store in an airtight container for up to 5 days.
