Ingredients

  • 1/4 cup (60ml) fresh lemon juice
  • 1 clove garlic, minced
  • 24 tablespoons water
  • 1 teaspoon maple syrup or honey
  • 1/2 teaspoon kosher salt
  • 2 cans (15oz each) chickpeas, drained and rinsed
  • 1 large cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup kalamata olives, pitted and halved
  • 1/4 cup pine nuts, toasted
  • 46 cups mixed greens (romaine and arugula)
  • 1 large avocado, sliced

Instructions

  1. Toast pine nuts in a small skillet over medium-low heat for 2-3 minutes until golden brown and nutty. Transfer to a plate to cool.
  2. In a medium bowl, whisk together tahini, lemon juice, minced garlic, maple syrup, and salt. The mixture will seize up initially.
  3. Slowly drizzle in water, one tablespoon at a time, whisking constantly until the dressing is smooth, creamy, and pourable. Adjust salt or lemon to taste.
  4. Drain and rinse chickpeas thoroughly. Pat dry if desired.
  5. In a large salad bowl, combine mixed greens, diced cucumber, halved cherry tomatoes, sliced red onion, and olives.
  6. Add the chickpeas and crumbled feta cheese to the bowl.
  7. Drizzle the tahini lemon dressing generously over the ingredients and toss gently to coat.
  8. Top with sliced avocado and toasted pine nuts. Serve immediately.

Notes

Rinse chickpeas well to remove metallic taste. Use fresh lemon juice for best flavor. Toast pine nuts carefully as they burn quickly. Store components separately for meal prep to keep greens crisp. Do not freeze this dish.
