A reliable, freezer-friendly baked ziti recipe designed for meal prep. This gluten-free version uses specific pasta blends and techniques to ensure the noodles hold their texture after freezing and reheating, providing four comforting dinners with minimal effort.
Ingredients
- 16 oz (450g) Gluten-Free Ziti or Penne (brown rice and quinoa blend)
- 1 lb (450g) Ground Beef (80/20)
- 24 oz (680g) Marinara Sauce (high-quality jarred or thick crushed tomato blend)
- 2 tbsp (30g) Tomato Paste
- 2 cups (200g) Mozzarella Cheese (freshly shredded)
- ½ cup (50g) Parmesan Cheese (grated)
- 1 cup (240g) Ricotta Cheese (full-fat)
- 4 cloves Garlic (minced)
- 1 tsp Dried Oregano
- Salt and Black Pepper (to taste)
- 1 tbsp Olive Oil
Instructions
- Preheat oven to 375°F (190°C).
- Bring a large pot of salted water to a boil. Cook gluten-free ziti for 2 minutes less than package directions. Drain and rinse with cold water to stop cooking. Set aside.
- In a large Dutch oven or stockpot, heat olive oil over medium-high heat. Add ground beef and cook until no pink remains, about 5 minutes. Drain excess fat if necessary.
- Reduce heat to medium. Add minced garlic and dried oregano to the beef; sauté for 1 minute until fragrant. Add tomato paste and stir for 30 seconds to caramelize.
- Pour in marinara sauce. Stir well and add salt and pepper to taste. Simmer on low heat for 5 minutes to meld flavors.
- In a large bowl, mix the drained pasta with the sauce. Gently fold in the ricotta cheese to create pockets.
- Transfer half of the pasta mixture into a 9×13 inch baking dish and spread evenly.
- Sprinkle half of the mozzarella and half of the parmesan over the first layer.
- Add the remaining pasta mixture on top. Finish with the rest of the mozzarella and parmesan, ensuring the top is completely covered.
- For immediate consumption: Bake for 20-25 minutes until cheese is bubbly and golden.
- For freezing: Cover tightly with foil and freeze. To cook from frozen, thaw in fridge overnight, then bake at 375°F for 45-50 minutes, removing foil for the last 10 minutes to brown.
Notes
Undercook the pasta by 2-3 minutes as gluten-free pasta continues to cook in the oven. Thaw frozen casseroles in the refrigerator overnight before baking to ensure even heating. Cool completely before portioning to prevent condensation and ice crystals. Label containers with the date; best eaten within 2 months for optimal texture.
