Description
A rich, indulgent breakfast casserole that combines refrigerated cinnamon roll dough with a creamy egg custard. It is designed to be assembled the night before for zero morning stress, resulting in a gooey, sticky, and bakery-quality weekend treat.
Ingredients
- 2 tubes (15 oz total) refrigerated cinnamon roll dough
- 4 large eggs
- 1 cup heavy cream
- 1 cup whole milk
- 2 tsp vanilla extract
- 1/2 cup packed brown sugar (divided)
- 1 tsp ground cinnamon (divided)
- 2 tbsp melted butter
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish generously with butter or non-stick spray.
- Unroll the cinnamon roll dough and cut each roll into quarters to create 16 pieces.
- In a large mixing bowl, whisk together eggs, heavy cream, whole milk, vanilla extract, 1/2 cup brown sugar, and 1 tsp cinnamon until smooth and sugar is dissolved.
- Spread the quartered cinnamon rolls evenly into the prepared baking dish in a single layer.
- Pour the custard mixture evenly over the dough. Gently press down on the dough pieces to ensure they are fully soaked.
- Cover the dish tightly with plastic wrap or a lid and refrigerate for at least 4 hours, ideally overnight.
- Remove from the fridge and let sit on the counter for 15 minutes while the oven heats up.
- Drizzle melted butter over the top and sprinkle with extra brown sugar and a pinch of cinnamon.
- Bake for 35-40 minutes until the top is golden brown and puffed, and the center is set.
- Serve warm. Optional: Drizzle with a glaze made from powdered sugar, milk, and vanilla.
Notes
The overnight soak is crucial for the texture; do not skip it if possible. If baking immediately, let it sit for at least 30-60 minutes. For leftovers, store in the refrigerator for up to 3 days. This dish does not freeze well due to the custard separating. To make it gluten-free, use gluten-free cinnamon roll dough. For a dairy-free option, use oat milk, coconut cream, and vegan dough.
