Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 3 cups low-sodium chicken broth
  • ½ cup heavy cream
  • ½ cup sun-dried tomatoes packed in oil, drained
  • 3 cups fresh spinach
  • 45 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 1 tablespoon Italian seasoning
  • ¼ teaspoon red pepper flakes
  • ½ cup freshly grated parmesan cheese
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Press the ‘Sauté’ button on the Instant Pot. Add olive oil and heat. Add diced onion and a pinch of salt; cook for 2-3 minutes until translucent.
  2. Add minced garlic, Italian seasoning, and red pepper flakes. Stir constantly for 30-60 seconds until fragrant but not browned.
  3. Pour in a splash of chicken broth and scrape up any browned bits from the bottom of the pot to deglaze.
  4. Add chicken breasts and the rest of the chicken broth. Nestle chicken into liquid and add drained sun-dried tomatoes.
  5. Secure the lid, set valve to ‘Sealing’, and pressure cook on High for 10 minutes.
  6. Perform a Quick Release. Remove chicken and shred into bite-sized pieces using two forks.
  7. Turn Instant Pot back to Sauté mode (Low). Stir in heavy cream and shredded chicken.
  8. Add fresh spinach and stir gently until wilted (about 30 seconds).
  9. Remove from heat and stir in grated parmesan cheese until melted. Season with salt and pepper to taste.

Notes

Ensure you deglaze the pot thoroughly after sautéing to prevent the ‘Burn’ error. Shredded chicken absorbs sauce better than diced. If the soup is too thick upon reheating, add a splash of broth or milk. Do not freeze if cream is already added, as it may separate.
