- 1.5 pounds fresh green beans
- 2 tablespoons extra virgin olive oil
- 3 tablespoons honey
- 4 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon rice vinegar
- 1/4 cup sliced almonds
- 1/2 teaspoon red pepper flakes
- Sea salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Trim the woody ends off the green beans and toss them into a large mixing bowl.
- In a small bowl, whisk together olive oil, honey, minced garlic, soy sauce, rice vinegar, red pepper flakes, salt, and pepper until combined.
- Pour the glaze over the green beans and toss until evenly coated.
- Spread the beans in a single layer on the baking sheet, ensuring they are not crowded.
- Roast for 15 minutes, then remove from oven and stir the beans.
- Sprinkle sliced almonds over the beans and return to the oven for 3-5 minutes until beans are tender-crisp and almonds are golden.
- Remove from oven, taste, and adjust seasoning if needed. Serve immediately.
Notes
Do not crowd the pan or the beans will steam instead of roast. If honey burns, lower oven temperature to 375°F. For extra richness, toss with cold butter after roasting. Best served hot and crispy.
