A quick and easy 30-minute weeknight meal featuring juicy pork tenderloin and roasted carrots coated in a sweet, savory, and sticky honey garlic glaze.

- 1.5 pounds pork tenderloin (preferably two small tenderloins)
- 2 tablespoons neutral oil (avocado or vegetable oil)
- 1 teaspoon kosher salt
- Freshly cracked black pepper
- 1 pound carrots, peeled and cut into sticks
- 2 tablespoons butter
- 2 sprigs fresh thyme (or 1 teaspoon dried thyme)
- ½ cup honey
- ¼ cup low-sodium soy sauce (or tamari for gluten-free)
- 6–8 cloves garlic, minced
- 2 tablespoons rice vinegar
- 1 teaspoon freshly grated ginger
- ½ teaspoon red pepper flakes (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or foil.
- Pat pork tenderloins dry with paper towels. Remove any silverskin. Season generously with salt and pepper on all sides.
- In a small bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, grated ginger, and red pepper flakes until smooth.
- Peel carrots and cut into sticks of uniform thickness. Toss with melted butter, salt, pepper, and thyme leaves.
- Spread carrots in a single layer on one side of the prepared baking sheet. Roast for 10 minutes.
- Remove pan from oven. Push carrots to one side and place pork tenderloins on the other side. Brush about half of the glaze over the pork.
- Return to oven and roast for 10 minutes. Remove and brush remaining glaze over the pork. Return to oven for 5-7 minutes, or until internal temperature reaches 145°F (63°C).
- Remove pork from oven and transfer to a cutting board. Tent loosely with foil and let rest for 5 minutes.
- Slice pork into medallions and serve over roasted carrots, drizzling with pan juices.
Notes
Do not overcook the pork; use a thermometer to ensure it reaches 145°F. Brushing the glaze twice prevents burning. Letting the pork rest is mandatory to retain juices. For a gluten-free version, use tamari instead of soy sauce.
