  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups low-sodium chicken broth
  • 2 cups shredded rotisserie chicken
  • 1/4 cup all-purpose flour
  • 1 cup whole milk
  • 1 teaspoon Dijon mustard
  • 1 1/2 cups all-purpose flour (for dumplings)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk (for dumplings)
  • 2 tablespoons melted butter (for dumplings)
  • Optional: frozen peas or chopped parsley

Instructions

  1. Dice the onion, carrots, and celery, and mince the garlic. Shred the rotisserie chicken.
  2. Melt 4 tablespoons of butter in a large Dutch oven over medium heat. Add the diced onions, carrots, and celery, and sauté for 3-4 minutes until soft.
  3. Add the minced garlic and cook for 30 seconds until fragrant. Sprinkle 1/4 cup flour over the veggies and whisk constantly for 1-2 minutes to create a roux.
  4. Slowly pour in the chicken broth while whisking constantly to prevent lumps. Whisk in the milk and Dijon mustard.
  5. Bring the mixture to a gentle simmer and cook for 2-3 minutes until it thickens slightly.
  6. Stir in the shredded rotisserie chicken and let it heat through for 2 minutes. Season with salt and pepper to taste.
  7. In a small bowl, whisk together 1 1/2 cups flour, baking powder, and salt. Stir in 1/2 cup milk and 2 tablespoons melted butter until a soft, slightly sticky dough forms.
  8. Reduce the heat on the chicken mixture to low. Drop tablespoon-sized scoops of dough onto the surface of the stew, leaving space between them.
  9. Cover the pot with a tight-fitting lid and let the dumplings steam-cook for 12-15 minutes. Do not lift the lid during this time.
  10. Remove from heat and let sit for 2 minutes before serving. Garnish with fresh parsley if desired.

Notes

Do not lift the lid while dumplings are cooking to ensure they stay fluffy. The dough should be slightly sticky; if too dry, add a teaspoon of milk. If you prefer a thinner gravy, add more broth. Do not freeze this recipe as the dumplings will become mushy upon thawing.
