  • 1 teaspoon smoked paprika
  • 1/2 cup low-sodium chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, fresh cilantro, avocado slices, lime wedges

Instructions

  1. Prep veggies by dicing onion and peppers into 1/2-inch pieces and mincing garlic.
  2. Heat a large skillet over medium-high heat. Add ground beef and break into small crumbles. Cook for 6-8 minutes until no longer pink. Drain excess grease if necessary.
  3. Add diced onions and peppers to the pan with the beef. Cook for 2-3 minutes until softened. Add minced garlic and cook for 1 more minute.
