- 1/2 cup (40g) Old-Fashioned Rolled Oats
- 1/2 cup (120ml) Water or Milk
- 1/2 cup (115g) Cottage Cheese (2% milkfat recommended)
- 1 tablespoon (16g) Peanut Butter
- 1 pinch Salt
- 1 teaspoon Honey or Maple Syrup (Optional)
- Cinnamon or Frozen Berries (Optional Add-ins)
Instructions
- Measure out the oats and cottage cheese. If using a blender, blend the cottage cheese and milk together until smooth; otherwise, set aside.
- In a microwave-safe mug, combine the oats and water (or milk). Stir well.
- Microwave on high for 1 minute. Stir again, then microwave for another 30-60 seconds until cooked but still slightly firm. Watch closely to prevent boiling over.
- Immediately add the cottage cheese to the hot oats. Vigorously whisk or stir with a fork until the mixture is smooth, creamy, and lump-free, resembling thick pudding.
- Stir in the peanut butter until mostly incorporated. Use a knife to swirl the peanut butter through the oats for a marbled effect.
- Sprinkle with a pinch of salt and optional sweetener or cinnamon.
- Let the oats sit for 2 minutes to thicken and allow flavors to meld. Add a splash of milk if too thick.
Notes
Do not skip the vigorous whisking step to ensure the cottage cheese melts smoothly. For faster cooking, you can pour boiling water over the oats and let sit for 2 minutes. Cottage cheese can be frozen in portions for later use. If using natural peanut butter, stir more thoroughly as oil may separate.
