  • 2 medium sweet potatoes (diced into ½-inch cubes)
  • 1 medium yellow onion (diced)
  • 4 cloves garlic (minced)
  • 2 tablespoons avocado oil or vegetable oil
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon fresh ginger (grated)
  • 34 green onions (sliced, for garnish)
  • 1 teaspoon toasted sesame seeds
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Prep ingredients: Dice sweet potatoes and onion, mince garlic, grate ginger, and mix soy sauce, honey, and vinegar in a small bowl.
  2. Heat oil in a 12-inch skillet over medium-high heat. Add ground turkey and let it sit undisturbed for 2-3 minutes to sear and brown.
  3. Stir the turkey to break it up and continue cooking until browned on all sides and no longer pink. Remove turkey from pan and set aside on a plate.
  4. Reduce heat to medium. Add diced sweet potatoes and onions to the same skillet. Season with salt and pepper. Cook for 8-10 minutes, stirring occasionally, until tender and caramelized.
  5. Push potatoes to the side. Add garlic and ginger to the empty space and cook for 30-60 seconds until fragrant.
  6. Return the cooked turkey to the pan. Pour the glaze mixture over everything and toss to coat.
  7. Simmer for 1-2 minutes until the sauce thickens and clings to the ingredients.
  8. Remove from heat. Stir in green onions and red pepper flakes. Serve immediately topped with sesame seeds.

Notes

Do not crowd the pan or stir the turkey immediately after adding it; let it sear to develop flavor. Remove the turkey from the pan while cooking vegetables to prevent overcooking. Use fresh garlic and ginger for best flavor. Tamari can be used instead of soy sauce for a gluten-free version.
