  • 1 medium yellow onion, finely diced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup beef broth (low-sodium)
  • ½ cup full-fat sour cream
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 8 oz cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons butter (divided)
  • 8 oz egg noodles
  • ½ cup freshly grated Parmesan cheese (divided)
  • 2 tablespoons fresh parsley, chopped
  • ½ teaspoon salt (or to taste)
  • Black pepper (to taste)
  • ½ teaspoon dried thyme

Instructions

  1. Prep ingredients: Dice onion, slice mushrooms, mince garlic, grate Parmesan, and measure sauces.
  2. Cook noodles: Boil egg noodles in salted water until al dente. Reserve ½ cup pasta water before draining. Toss noodles with a little butter to prevent sticking.
  3. Brown beef: In a large skillet, melt 1 tablespoon butter over medium-high heat. Cook ground beef, breaking it up, until browned. Drain excess fat if necessary, then remove beef from pan.
  4. Sauté aromatics: In the same skillet, add remaining 1 tablespoon butter. Cook mushrooms until golden brown. Add onion and cook until soft. Add garlic and thyme, cooking until fragrant.
  5. Build sauce: Stir in cream of mushroom soup and beef broth. Whisk until smooth. Return beef to pan. Add Worcestershire sauce and Dijon mustard. Simmer for 2-3 minutes until slightly thickened.
  6. Finish sauce: Remove skillet from heat. Stir in sour cream and half of the Parmesan cheese. Adjust salt and pepper to taste.
  7. Combine and serve: Add cooked noodles to the skillet and toss to coat. Add reserved pasta water if sauce is too thick. Serve topped with remaining Parmesan and parsley.

Notes

Brown mushrooms properly without stirring too much to develop flavor. Always remove pan from heat before adding sour cream to prevent separation. Use fresh Parmesan for better melting. Reserve pasta water to adjust sauce consistency.
