Description
A simple yet elegant summer salad featuring charred sweet peaches, creamy burrata cheese, fresh basil, and a balsamic glaze drizzle. It requires minimal cooking effort and delivers maximum flavor.

- 4 large ripe peaches (about 800g)
- 1 tablespoon olive oil (for brushing peaches)
- Pinch of flaky sea salt
- 1 ball fresh burrata cheese (200g)
- 1 cup fresh basil leaves (20g, loosely packed)
- 2–3 tablespoons high-quality balsamic glaze
- 1–2 tablespoons extra virgin olive oil (for drizzling)
- Optional: 2-3 slices prosciutto, torn
- Optional: ¼ cup walnuts or pecans, toasted
Instructions
- Wash peaches and pat dry. Cut in half and remove pits. Brush both sides lightly with olive oil.
- Preheat grill to medium-high heat. Place peaches cut-side down on the grate. Close lid and cook for 2-3 minutes until char marks appear and fruit softens slightly.
- Flip peaches and cook skin-side for another 1-2 minutes. Remove from grill and sprinkle with flaky sea salt while warm. Let cool slightly.
- Tear fresh basil leaves by hand and scatter them across a large serving platter.
- Place the ball of burrata in the center of the platter. Add optional prosciutto or nuts if using.
- Arrange grilled peach halves on top of the basil and around the burrata.
- Drizzle generously with balsamic glaze and extra virgin olive oil.
- Tear the burrata open with a spoon or hands to release the creamy center. Serve immediately.
Notes
Ensure peaches are ripe but firm enough to hold shape on the grill. Do not overcook peaches or they will become mushy. Serve immediately to maintain temperature contrast between warm peaches and cool cheese. If hosting, grill peaches up to 4 hours ahead and assemble just before serving.
