  • 2 cans (15 oz each) chickpeas (garbanzo beans)
  • 2 tbsp avocado oil
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 2 medium English cucumbers
  • 1/2 medium red onion
  • 3 tbsp tahini
  • 3 tbsp fresh lemon juice
  • 1 tsp maple syrup
  • 24 tbsp water

Instructions

  1. Drain and rinse the chickpeas. Spread them on paper towels and pat them completely dry to ensure crispiness.
  2. Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper.
  3. In a medium bowl, toss the dried chickpeas with avocado oil, smoked paprika, cumin, garlic powder, and salt until evenly coated.
  4. Spread chickpeas in a single layer on the sheet pan. Roast for 25-30 minutes, shaking the pan halfway through, until golden brown and crispy. Let cool completely.
  5. While chickpeas roast, whisk tahini, lemon juice, maple syrup, and salt in a small bowl. Slowly drizzle in water, one tablespoon at a time, whisking until the dressing is smooth and pourable.
  6. Chop cucumbers into half-moons or cubes and thinly slice the red onion.
  7. In a large bowl, combine the cooled roasted chickpeas, cucumber, and red onion. Drizzle with dressing and toss gently to coat. Serve immediately.

Notes

Ensure chickpeas are thoroughly dried before roasting to achieve maximum crispiness. Let chickpeas cool completely before adding to the salad to prevent steaming the cucumbers. Store roasted chickpeas at room temperature for up to 2 days. Keep dressing and chopped vegetables separate until serving to maintain texture.
