Description
These dense, rich, and deeply chocolatey brownies are baked on a grill using almond flour for a naturally gluten-free, fudgy texture with a subtle hint of wood smoke.
Ingredients
Scale
- 2 cups (340g) semi-sweet dark chocolate chips
- ½ cup (115g) unsalted butter, melted
- 1 ½ cups (150g) fine-grind blanched almond flour
- ½ cup (50g) unsweetened cocoa powder
- ½ teaspoon baking powder
- ½ teaspoon fine sea salt
- 1 cup (200g) granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- ½ cup (85g) chocolate chips (for mix-ins)
- Optional: ½ cup chopped pecans or walnuts
- Optional: Sea salt flakes for topping
Instructions
- Set up your grill for indirect heat, maintaining a temperature of 350°F to 375°F. If using charcoal, pile coals on one side; if gas, turn on only one or two burners.
- Prepare an 8×8 inch aluminum pan by lining it with foil and spraying with non-stick cooking spray. Double-layer the foil for strength.
- In a large microwave-safe bowl, combine 2 cups chocolate chips and melted butter. Microwave in 30-second intervals, stirring until smooth. Let cool for 5 minutes.
- Whisk in sugar, eggs, and vanilla extract into the chocolate mixture until combined and sugar is mostly dissolved.
- Stir in almond flour, cocoa powder, baking powder, and salt until just combined. Do not overmix.
- Fold in the remaining ½ cup chocolate chips.
- Pour batter into the prepared pan and place on the grill grate over the indirect heat zone. Close the lid.
- Grill for 25-30 minutes. Check at 25 minutes by inserting a toothpick; it should come out with moist crumbs, not clean batter.
- Remove from grill and let cool completely on a wire rack before slicing into squares.
- Sprinkle with sea salt flakes if desired and serve.
Notes
Ensure you use fine-grind blanched almond flour, not almond meal, for a smooth texture. Maintain indirect heat to prevent burning. Do not overbake; the toothpick should have moist crumbs. Brownies are best served slightly chilled or at room temperature. They can be stored in an airtight container for up to 3 days at room temperature or frozen for up to 2 months.
