  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • ½ cup (85g) chocolate chips (for mix-ins)
  • Optional: ½ cup chopped pecans or walnuts
  • Optional: Sea salt flakes for topping

Instructions

  1. Set up your grill for indirect heat, maintaining a temperature of 350°F to 375°F. If using charcoal, pile coals on one side; if gas, turn on only one or two burners.
  2. Prepare an 8×8 inch aluminum pan by lining it with foil and spraying with non-stick cooking spray. Double-layer the foil for strength.
  3. In a large microwave-safe bowl, combine 2 cups chocolate chips and melted butter. Microwave in 30-second intervals, stirring until smooth. Let cool for 5 minutes.
  4. Whisk in sugar, eggs, and vanilla extract into the chocolate mixture until combined and sugar is mostly dissolved.
  5. Stir in almond flour, cocoa powder, baking powder, and salt until just combined. Do not overmix.
  6. Fold in the remaining ½ cup chocolate chips.
  7. Pour batter into the prepared pan and place on the grill grate over the indirect heat zone. Close the lid.
  8. Grill for 25-30 minutes. Check at 25 minutes by inserting a toothpick; it should come out with moist crumbs, not clean batter.
  9. Remove from grill and let cool completely on a wire rack before slicing into squares.
  10. Sprinkle with sea salt flakes if desired and serve.
