- 1.5 pounds sirloin or ribeye steak, cut into 1-inch cubes
- 1 pound large shrimp, peeled, deveined, and tails on (optional)
- 4 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup white wine (dry Pinot Grigio or Sauvignon Blanc)
- 1 teaspoon black pepper, freshly cracked
- Kosher salt, to taste
- 1/2 teaspoon red pepper flakes (optional)
- Olive oil, for searing
Instructions
- Pat the steak cubes and shrimp dry with paper towels to ensure a good sear.
- Season the steak cubes with 1 teaspoon kosher salt, 1 teaspoon black pepper, and 1 teaspoon olive oil. Let sit while prepping shrimp.
- Season the shrimp with a pinch of salt and pepper.
- Heat a large skillet over medium-high heat with 1 tablespoon of oil until shimmering.
- Sear the steak cubes in a single layer for 2-3 minutes per side until browned. Remove steak from pan and set aside.
- Reduce heat to medium. Add shrimp to the same pan and sear for 1-2 minutes per side until pink. Remove shrimp and add to the plate with the steak.
- Reduce heat to low. Add butter to the pan. Once melted, add garlic and red pepper flakes. Stir for 30 seconds until fragrant.
- Add white wine to deglaze the pan and simmer for 1 minute to cook off alcohol.
- Return steak and shrimp to the pan. Toss to coat in the sauce.
- Add chopped parsley and stir gently to combine. Taste and adjust salt if needed.
- Serve immediately over rice, mashed potatoes, or with crusty bread.
Notes
Pat all meat dry before cooking to prevent steaming. Do not overcrowd the pan; cook in batches if necessary. Watch the garlic closely as it burns easily. For a lighter version, use half butter and half olive oil. This recipe is naturally gluten-free.
