Description

A rustic, sweet, and savory flatbread featuring caramelized onions, fresh figs, tangy goat cheese, and balsamic glaze. It looks fancy but is easy to make, perfect for entertaining or a quick weeknight meal.


Ingredients

  • 1 lb (450g) Flatbread Dough or Naan
  • 68 medium fresh figs, halved (~150g)
  • 2 large yellow onions, thinly sliced (~350g)
  • 4 oz (115g) Goat Cheese (Chèvre), crumbled
  • 2 tbsp (30ml) Balsamic Glaze
  • 2 tbsp (30ml) Extra Virgin Olive Oil, divided
  • 1 tsp (2g) Fresh Thyme Leaves
  • Pinch of salt

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-low heat. Add sliced onions and a pinch of salt. Cook, stirring every 5 minutes, for 20-25 minutes until deep brown, soft, and jammy. Set aside.
  3. If using dough, roll it out into a rectangle about 1/4 inch thick. Lay flatbread or dough on the prepared baking sheet.
  4. Brush the entire surface of the flatbread with 1 tablespoon of olive oil.
  5. Scatter crumbled goat cheese evenly over the flatbread, leaving a border around the edges.
  6. Arrange halved figs cut-side up on top of the cheese.
  7. Sprinkle the caramelized onions evenly over the figs and cheese.
  8. Bake for 12-15 minutes until the cheese is melted and bubbly and the crust edges are golden and crisp.
  9. Remove from oven and immediately drizzle with balsamic glaze.
  10. Sprinkle with fresh thyme leaves. Let rest for 2 minutes before slicing into squares or triangles.
  11. Serve warm.

Notes

Caramelized onions can be made ahead and stored in the fridge for up to 5 days or frozen for 3 months. Do not add balsamic glaze before baking to prevent sogginess. If using dried figs, rehydrate them in warm water for 10 minutes first. For extra crispiness, use a preheated pizza stone.
