Instructions

  1. Separate eggs, placing yolks in one bowl and whites in a clean, dry bowl. Whisk dry ingredients (flour, baking powder, baking soda, spices, salt, sugar) in a large bowl and set aside.
  2. In a medium bowl, whisk together pumpkin puree, egg yolks, buttermilk, vanilla, and melted butter until smooth.
  3. Pour wet mixture into dry ingredients and gently stir with a rubber spatula until just combined. Do not overmix; lumps are okay.
  4. Whip egg whites on medium-high speed until stiff peaks form.
  5. Fold one-third of the whipped egg whites into the batter to lighten it, then gently fold in the remaining whites until mostly incorporated.
  6. Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour ¼ cup batter per pancake.
  7. Cook for 2-3 minutes until bubbles form on the surface and edges look set. Flip and cook for another 1-2 minutes until golden brown.
  8. Keep cooked pancakes warm in a 200°F oven on a wire rack.
