These no-cook pinwheel sandwiches feature a creamy ranch cream cheese spread, sharp cheddar, crisp lettuce, and savory bacon rolled in thin flour tortillas. Perfect for tailgating, parties, or meal prep, they are easy to make ahead and hold together well for transport.
Ingredients
- 8 thin flour tortillas (8-inch diameter)
- 8 oz cream cheese, softened
- 1 packet (1 oz) dry ranch dressing mix
- 1 cup shredded sharp cheddar cheese
- 1 head butter or Boston lettuce, leaves separated and dried thoroughly
- 6 slices cooked bacon, cooled and crumbled
- 2 tbsp fresh chives, finely chopped
- 1/2 tsp freshly ground black pepper
Instructions
- In a medium bowl, combine the softened cream cheese and dry ranch seasoning mix. Blend until smooth using a hand mixer or sturdy spoon.
- Stir in the shredded cheddar cheese and chopped chives. Taste and adjust seasoning if needed. Set aside.
- Lay tortillas side-by-side on a large cutting board, slightly overlapping to create one large surface. If tortillas are stiff, microwave them for 10-15 seconds wrapped in a damp paper towel to soften.
- Using an offset spatula, spread the cream cheese mixture evenly over each tortilla, leaving a 1/2-inch border on the edges.
- Lay lettuce leaves over the cream cheese layer, covering the entire surface. Sprinkle crumbled bacon evenly over the lettuce.
- Starting from a long edge, tightly roll the tortilla up, tucking the filling in as you go to keep it compact.
- Wrap each roll tightly in plastic wrap, twisting the ends like a candy wrapper. Refrigerate for at least 30 minutes (or up to 24 hours) to firm up.
- Unwrap the log and slice into 1-inch rounds using a sharp or serrated knife. Wipe the knife between cuts for clean edges.
- Serve cold or at room temperature.
