Description

A quick and creamy weeknight dinner that comes together in just 20 minutes using minimal cleanup. This one-pot meal combines browned ground beef, egg noodles, and a rich sour cream sauce for a comforting, restaurant-quality taste.

  • 1 lb (450g) 80/20 ground beef
  • 8 oz (225g) wide egg noodles
  • 2 cups (480ml) low-sodium beef broth
  • 1 cup (240g) full-fat plain sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat a large 12-inch skillet or Dutch oven over medium-high heat. Add the ground beef and break it apart with a wooden spoon. Cook for 4-5 minutes until browned with no pink bits remaining.
  2. If there is excessive grease (more than 2 tablespoons), drain it, leaving a little for flavor. Season the beef with salt, pepper, garlic powder, and onion powder. Stir to coat.
  3. Reduce heat to medium. Stir in the Dijon mustard and Worcestershire sauce. Pour in the beef broth, scraping the bottom of the pan to release browned bits. Bring the liquid to a simmer.
  4. Add the dry egg noodles to the pot. Stir to combine with the liquid. Cover with a lid and simmer gently for about 10 minutes.
  5. Check the noodles at the 7-minute mark, stirring to prevent sticking. Taste at 9 minutes; they should be tender but al dente. If needed, cook for another 1-2 minutes until noodles absorb most of the broth.
  6. Remove the pot from the heat. Let it sit for 1 minute to cool slightly. Stir in the sour cream until smooth. Do not return to boiling heat to prevent curdling.
  7. Taste and adjust seasoning with more salt or pepper if needed. If the sauce is too thick, add a splash of milk or broth. Garnish with fresh parsley and serve immediately.

Notes

Use full-fat sour cream to prevent curdling and ensure a creamy texture. Remove the pot from heat before adding sour cream. Do not freeze this dish as the sour cream will separate and the noodles will become mushy upon thawing. For a mushroom lover’s version, sauté 1 cup of sliced mushrooms with the beef in Step 2.
