- 4 salmon fillets (approx. 6 oz / 170g each)
- 2 tbsp neutral oil (avocado or refined coconut oil)
- 3 tbsp honey
- 2 tbsp low-sodium soy sauce
- 4 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tsp cornstarch mixed with 1 tsp cold water
- 1 tsp sesame oil
- 2 green onions, sliced (for garnish)
- Salt and pepper to taste
Instructions
- Pat salmon fillets completely dry with paper towels and season both sides lightly with salt and pepper. If skin is on, score lightly in two places.
- Heat a non-stick skillet over medium-high heat and add neutral oil. Once oil shimmers, place salmon fillets skin-side down.
- Press gently with a spatula for 10 seconds, then cook undisturbed for 4-5 minutes until skin is crispy and color changes halfway up the side.
- Flip fillets carefully and cook for another 3-4 minutes until fish flakes easily and reaches an internal temperature of 125°F (52°C). Remove to a plate and tent with foil.
- Reduce heat to medium-low in the same pan. Add minced garlic and grated ginger; sauté for 30 seconds until fragrant.
- Pour in honey, soy sauce, and sesame oil. Stir to combine, then add the cornstarch mixture, stirring constantly until the sauce thickens and coats the back of a spoon.
- Return salmon to the pan, spooning glaze over the top. Let sit for 1 minute to absorb flavors.
- Transfer to plates, garnish with sliced green onions, and serve immediately.
Notes
Ensure salmon is completely dry before searing to achieve crispy skin. Do not move the fish while searing to prevent sticking. If the glaze gets too thick, add a splash of water; if too thin, reduce for 30 seconds. This recipe does not freeze well due to texture changes in the salmon.
