  • 1 lb ground turkey (93% lean preferred)
  • 2 medium sweet potatoes (approx. 1.5 lbs), peeled and diced into 1/2-inch cubes
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 2 cups fresh spinach
  • 1/2 cup low-sodium chicken broth
  • 2 tbsp avocado oil or olive oil
  • Salt and black pepper to taste

Instructions

  1. Prep vegetables: Peel and dice sweet potatoes into 1/2-inch cubes. Dice the onion and mince the garlic. Wash the spinach.
  2. Brown the turkey: Heat avocado oil in a large 12-inch skillet over medium-high heat. Add ground turkey and break it up with a wooden spoon. Cook for 5-7 minutes until browned and no longer pink. Remove turkey from the pan and set aside, leaving the oil and fond in the skillet.
  3. Sauté aromatics: Reduce heat to medium. Add diced onions to the skillet and cook for 2-3 minutes until translucent. Add garlic and cook for 30 seconds until fragrant.
  4. Cook sweet potatoes: Add diced sweet potatoes to the skillet. Stir to coat in oil and onion juices. Sprinkle in smoked paprika, cumin, salt, and black pepper. Pour in chicken broth, cover with a lid, and simmer for 8-10 minutes until potatoes are tender when pierced with a fork.
  5. Combine and finish: Return the cooked turkey to the skillet. Stir to combine and heat through for 1 minute. Add fresh spinach and stir until wilted, about 30 seconds to 1 minute. Taste and adjust seasoning with salt or red pepper flakes if desired. Serve immediately.

Notes

Do not crowd the pan when browning the turkey to ensure proper browning rather than steaming. If sweet potatoes are large, par-cook them in the microwave for 2 minutes before adding to the skillet. For a saucier dish, reserve some broth to add at the end. This dish stores well in the fridge for 4 days and freezes for up to 3 months.
