A quick and creamy chicken tikka masala that comes together in just 30 minutes using pantry staples. This one-pot weeknight dinner is kid-approved, mildly spiced, and perfect for busy families.

- 1.5 lbs chicken breast, cut into 1-inch cubes
- 1/2 cup full-fat Greek yogurt
- 2 tbsp tomato paste
- 1 can (13.5 oz) full-fat coconut milk
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/2 tsp salt
- 1 tsp garam masala
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp oil (divided)
- 1/2 cup water or chicken broth
- Fresh cilantro for garnish
Instructions
- In a medium bowl, combine chicken cubes with Greek yogurt, 1 tsp cumin, 1 tsp coriander, 1 tsp paprika, 1/2 tsp turmeric, and 1/2 tsp salt. Mix well and let sit for 5 minutes.
- Heat 1 tbsp oil in a large skillet over medium-high heat. Sear chicken in a single layer for 2-3 minutes per side until browned but not cooked through. Remove chicken to a plate.
- Reduce heat to medium. Add remaining 1 tbsp oil if needed. Sauté garlic and ginger for 1 minute until fragrant.
- Stir in tomato paste and remaining spices (garam masala, paprika, salt). Cook for 1-2 minutes to caramelize.
- Pour in coconut milk, scraping up brown bits from the pan. Add water or broth and bring to a gentle simmer.
- Return chicken and juices to the pan. Simmer for 5-7 minutes until chicken reaches 165°F and sauce thickens.
- Remove from heat, stir in fresh cilantro, and serve over basmati rice or with naan.
Notes
Do not skip searing the chicken for better texture. Toast spices in oil to release essential oils. If sauce is too thin, simmer longer or use cornstarch slurry. If sauce separates, whisk vigorously over low heat. Can be marinated up to 24 hours ahead.
