Description

A quick and easy weeknight dinner featuring tender shredded chicken cooked in a slow cooker with tangy buffalo sauce, served on soft Hawaiian rolls with melted cheese and ranch dressing.

  • 23 pounds boneless, skinless chicken breasts
  • 1 cup buffalo sauce (such as Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1216 Hawaiian rolls or slider buns
  • 1 cup shredded mozzarella cheese
  • 1/2 cup ranch dressing
  • Blue cheese dressing (optional)
  • Carrot sticks and celery (for serving)
  • Celery salt (optional)
  • Green onions, chopped (optional)
  • Hot sauce (optional, for extra heat)

Instructions

  1. If chicken breasts are large, cut them in half to fit in a single layer in the bottom of a 6-quart slow cooker.
  2. In a small bowl, whisk together buffalo sauce, melted butter, garlic powder, and onion powder.
  3. Pour the sauce mixture over the chicken, ensuring every piece is coated. Baste the top if needed.
  4. Cover and cook on Low for 6-8 hours or on High for 3-4 hours, until chicken reaches 165°F and shreds easily.
  5. Transfer chicken to a large bowl or leave in the pot. Use two forks to shred the meat, discarding any large fat pieces.
  6. Slice Hawaiian rolls in half horizontally. Place bottom halves on a baking sheet.
  7. Pile shredded buffalo chicken generously onto each roll half and sprinkle with mozzarella cheese.
  8. Broil sliders for 2-3 minutes until cheese is melted and bubbly, watching closely to prevent burning.
  9. Drizzle with ranch dressing and serve immediately with carrot sticks and celery.

Notes

Chicken can be cooked from frozen, but add 30-60 minutes to cook time. Do not freeze assembled sliders with cheese as the texture will suffer. The liquid left in the crockpot can be mixed with ranch for a dipping sauce. For a milder version, use half buffalo sauce and half ranch in the crockpot.
