  • 6 to 8 bone-in or boneless pork chops (about 1-inch thick)
  • 2 tablespoons neutral oil (vegetable or canola)
  • Salt and black pepper (generous amounts)
  • 10 ounces Cremini or Button mushrooms (sliced)
  • 1 medium yellow onion (diced)
  • 4 cloves garlic (minced)
  • 1 cup low-sodium beef broth
  • ½ cup full-fat sour cream
  • 1 packet (about 1 ounce) gravy granules (Mushroom or Brown Gravy Mix)
  • 1 tablespoon butter
  • Optional: 1 teaspoon fresh thyme or rosemary
  • Optional: ¼ cup white wine

Instructions

  1. Pat pork chops dry and season generously with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat. Sear pork chops for 2-3 minutes per side until golden brown. Transfer to the slow cooker.
  3. In the same skillet, sauté sliced mushrooms and diced onion for 5-7 minutes until softened and browned. Add minced garlic in the last minute.
  4. Stir gravy granules into the vegetables to coat them.
  5. In a bowl, whisk beef broth with remaining gravy granules until smooth. Pour into the skillet, scraping up brown bits, then transfer everything to the slow cooker over the pork.
  6. Cover and cook on LOW for 4-6 hours (or HIGH for 2-3 hours) until pork is tender.
  7. Remove pork to a platter and tent with foil. Turn slow cooker to HIGH.
  8. Whisk in sour cream and butter until smooth. Adjust consistency with broth if too thick, or simmer uncovered to reduce if too thin.
  9. Serve pork chops topped with the creamy mushroom gravy.

Notes

Do not skip searing the pork for better flavor. Add sour cream only at the end to prevent curdling. Use full-fat sour cream for best texture. Leftovers taste better the next day. Do not freeze as sour cream may separate.
