  • 23 pounds beef chuck roast, sliced against the grain into ½-inch strips
  • ½ cup coconut aminos or low-sodium soy sauce
  • ½ cup low-sodium beef broth
  • 1 tablespoon freshly grated ginger
  • 6 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 34 heads broccoli, cut into bite-sized florets
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (slurry)
  • 4 stalks green onions, sliced (for garnish)
  • Optional: Red pepper flakes, water chestnuts, sesame seeds

Instructions

  1. Slice the beef chuck roast against the grain into ½-inch thick strips and arrange them in the bottom of a slow cooker.
  2. In a medium bowl, whisk together the soy sauce (or coconut aminos), beef broth, ginger, garlic, brown sugar, rice vinegar, and sesame oil until the sugar is dissolved.
  3. Pour the sauce mixture over the beef in the slow cooker and stir to coat evenly.
  4. Cover and cook on LOW for 6-7 hours (or HIGH for 3-4 hours) until the beef is fork-tender.
  5. About 30 minutes before serving, add the broccoli florets to the slow cooker. Cover and cook on HIGH for 30 minutes until broccoli is crisp-tender.
  6. In a small bowl, mix the cornstarch with cold water to create a smooth slurry. Stir the slurry into the slow cooker.
  7. Cover and cook on HIGH for an additional 15-20 minutes, stirring occasionally, until the sauce thickens and becomes glossy.
  8. Turn off the slow cooker, garnish with sliced green onions and sesame seeds, and serve immediately over steamed rice.

Notes

Slice beef against the grain for maximum tenderness. Do not add broccoli at the beginning or it will become mushy. Always mix cornstarch with cold water before adding to prevent clumping. For a gluten-free version, use coconut aminos instead of soy sauce.
