- ½ cup grated parmesan cheese

Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
- Pat salmon fillets dry with paper towels to ensure the crust sticks.
- Place salmon on the prepared baking sheet. Brush tops lightly with olive oil and season with salt and black pepper.
- In a small bowl, combine panko breadcrumbs, grated parmesan, garlic powder, dried dill, and red pepper flakes (if using). Mix well.
- Melt the butter in a separate small bowl.
- Brush the top of each salmon fillet generously with melted butter.
- Press the panko-parmesan mixture firmly onto the buttered tops of the salmon to create an even, thick layer.
- Bake for 12-15 minutes, or until the crust is golden brown and the salmon is opaque and flakes easily with a fork.
- Remove from oven and let rest for 2 minutes.
- Squeeze fresh lemon juice over the fillets before serving.

Patting the salmon dry is crucial for a crispy crust. Press the breadcrumb mixture firmly onto the fish to prevent it from falling off. Do not flip the salmon while baking. For best results, use freshly grated parmesan rather than pre-grated. Internal temperature should reach 145°F, though pulling at 135-140°F keeps it moister.
