- 1 cup all-purpose flour
- 2 tablespoons cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

- 2 large eggs
- 1 tablespoon milk or water
- 4 cups vegetable oil (for frying)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2–3 tablespoons buttermilk
- 1 teaspoon dried parsley
- 1 teaspoon dried dill
- 1 teaspoon Cajun seasoning
- 1/4 teaspoon cayenne pepper (for dip)
- 1/2 teaspoon garlic powder (for dip)
- 1 tablespoon chopped chives
Instructions
- Whisk together mayonnaise, sour cream, buttermilk, dried parsley, dried dill, Cajun seasoning, cayenne, and garlic powder for the dip. Cover and refrigerate to let flavors meld.
- Set up a dredging station with three shallow bowls. In the first, whisk flour, cornstarch, garlic powder, onion powder, cayenne, and salt. In the second, whisk eggs with milk or water.
- Pat pickle spears completely dry with paper towels.
- Heat vegetable oil in a large skillet or Dutch oven to 350°F (175°C).
- Dredge a dry pickle spear in the flour mixture, shaking off excess. Dip into the egg wash, then press back into the flour mixture for a second coat (double-dip). Place on a plate.
- Carefully lower 4-5 pickles into the hot oil. Fry for 2-3 minutes per side until deep golden brown and crispy.
- Remove pickles and place on a wire rack to drain. Season with a pinch of salt while warm.
- Serve immediately with the chilled Cajun ranch dip.
Notes
Ensure pickles are completely dry before breading to prevent oil splatter and batter sliding off. Maintain oil temperature at 350°F to avoid soggy or burnt pickles. Do not overcrowd the pan; fry in batches. The dip tastes better if made ahead of time.
